Turn off staff selection

A new setting lets you turn off the staff-picking step in the booking flow – guests then get whichever specialist happens to be free for that time. It only matters when more than one specialist offers the same service; with a single specialist the step never showed anyway, and a specialist's own booking link still picks them even with the step off.
